Smoked Corned Beef with Roasted Vegetables and Dijon Brown Sugar Sauce

Bill Bailey's Smoked Corned Beef with Roasted Vegetables and Dijon Brown Sugar Sauce. Smoked Corned Beef?  Yes!  Smoking takes your Corned Beef to a whole new level with a fabulous layered smokiness that is perfectly complimented with the sweet and tangy mustard sausace.    

Ingredients

    • 1 Bill Bailey's Corned Beef Round
    • 2 Tbs smoked paprika
    • 1 Tbs fine ground black pepper
    • 1 tsp onion powder
    • 1 tsp roasted garlic powder
    • 2 C apple juice
    • 12 oz Pilsner or Lager Beer
    • 1/2 head green cabbage, cut into wedges
    • 1 head radicchio, cut into wedges
    • 1 bunch radishes, cleaned and halved
    • 4 rainbow carrots, peeled and cut in half
    • 4 Tbs olive oil
    • salt and freshly ground pepper
  • Dijon Mustard Sauce
    • 1 C packed dark brown sugar
    • 3 Tbs Dijon mustard
  • Preparation Instructions

    1. Remove the Bill Bailey's Corned Beef from the package and place in a large pot. Cover with cold water and let soak, in the refrigerator, overnight.
    2. When ready to cook, set smoker to 180°F. Remove Corned Beef from the pot and pat dry. In a small mixing bowl, combine smoked paprika, black pepper, onion powder, and garlic powder. Stir to combine. Rub Corned Beef all over with the spice rub. Place Corned Beef directly on the grill grate, close the lid and smoke for 2 hours.
    3. Transfer Corned Beef to a shallow roasting pan. Increase temperature of smoker to 225°F. Place roasting pan on grill grates. Add apple juice and beer to the pan, surrounding the Corned Beef. Cover roasting pan with aluminum foil and smoke for 2 hours more.
    4. During the last 45 minutes or so, preheat oven to 400°F. Place vegetables on a sheet pan in a single layer, drizzle with olive oil and season liberally with salt and pepper. Roast until tender, about 25 minutes.
    5. To make the sauce: in a small bowl, whisk together the brown sugar and Dijon mustard until smooth.
    6. To serve, slice the Corned Beef and serve with the roasted vegetables and mustard sauce.
