Carne Asada Loaded Fries

Bill Bailey's Carne Asada Loaded Fries. These fries are loaded with fabulous flavor from our authentic Carne Asada, easy homemade pico de gallo and guacamole, sure to be a great hit at any get-together.
Ingredients

- 2 lb Bill Bailey's Carne Asada
- 1 bag (22-ounce) frozen steak fries
- 2 Mexican cheese blend

Homemade Pico de Gallo
- 1 pt cherry tomatoes, cut into quarters
- 1/3 C red onion, diced
- 1/2 jalapeno, seeded and minced
- 1/4 C fresh cilantro, chopped
- 1 Tbs lime juice

Homemade Guacamole
- 2 ripe avocados, pit removed and peeled
- 1 lime, juiced
- 2 Tbs red onion, minced
- 1/2 jalapeno, seeded and minced
- cilantro leaves

Preparation Instructions
- Preheat your BBQ to high heat and grill the Carne Asada for about 8 minutes, turning every 2-3 minutes or until cooked through to an internal temperature of 145ºF. Slice the Carne Asada into thin strips, cutting against the grain for added tenderness.
- Meanwhile, bake the steak fries according to package directions.

To make the Homemade Pico de Gallo
- In a mixing bowl combine the quartered tomatoes, red onions, jalapeno, cilantro and lime juice.
- Season with salt and pepper and toss to combine.

To make the Homemade Guacamole
- Place the avocados in a resealable plastic bag along with the lime juice, red onion and jalapeno.
- Season with salt and pepper, seal the bag, and squeeze the bag to form a chunky guacamole.

To serve
- Arrange the hot steak fries on a large platter.
- Top with the shredded cheese and sliced carne asada.
- Scatter the Pico de Gallo all over and top with the guacamole.
- Garnish with cilantro leaves and serve.
