Tri-Tip Roasts

Note: Cooking instructions are meant as guidelines only. Cook to recommended internal temperature guidelines and adjust cooking times if necessary for size and weight of products as appliances will vary. You may not achieve desired results due to these variables, therefore, while care has been taken to provide accurate cooking guidelines users are advised to use their discretion.

Gas Grill

  1. Preheat gas grill to high heat.
  2. Remove Bill Bailey’s Tri-Tip Roast from package and place on preheated grill.
  3. Grill 10 minutes per side to seal in juices.
  4. Reduce heat to medium and continue grilling, turning frequently for 20-30 minutes.
  5. Cook to a minimum internal temperature of 145°F as measured with a food thermometer.
  6. Remove from grill and place on cutting board, cover loosely with foil and allow the Tri-Tip Roast to rest for a minimum of 10 minutes.
  7. Slice against the grain for maximum tenderness.

Charcoal Grill

  1. Prepare grill and charcoal briquettes for medium-high heat (approximately 25-30 minutes)
  2. Remove Bill Bailey’s Tri-Tip Roast from package and place on prepared grill.
  3. Grill 8 minutes per side to seal in juices. Continue grilling turning frequently for 20-30 minutes.
  4. Cook to a minimum internal temperature of 145°F as measured with a food thermometer.
  5. Remove from grill and place on cutting board, cover loosely with foil and allow the Tri-Tip Roast to rest for a minimum of 10 minutes.
  6. Slice against the grain for maximum tenderness.

Smoker

  1. Preheat smoker to 225° F and add wood chunks, chips or pellets to smoke according to manufacturer’s instructions.
  2. Remove Bill Bailey’s Tri-Tip Roast from package and place in smoker for approximately 60 minutes.
  3. When Tri-Tip Roast is done smoking, carefully remove from the smoker and finish on a grill that has been prepared to medium-high heat or in a 350°F oven until Tri-Tip reaches 145°F internal temperature, approximately 8 to 10 minutes. This will add additional color and flavor to the Tri-Tip.
  4. Remove Tri-Tip from grill or oven and wrap in foil. Let rest for 15 minutes, this will continue the cooking process for another 5 degrees, making the cut extremely tender as the juices slowly redistribute into the meat.
  5. Slice against the grain for maximum tenderness.

  1. Preheat Oven to 350°F.
  2. Remove Bill Bailey’s Tri-Tip Roast from package and place in roasting pan with a rack, cover loosely with foil.
  3. Roast for 40 minutes, remove foil and roast another 10 minutes to allow browning bringing the internal temperature as measured with a food thermometer to 145°F.
  4. Remove from oven, place on a cutting board, cover loosely with foil and allow the Tri-Tip Roast to rest for 10 minutes.
  5. Slice against the grain for maximum tenderness.

Slow Cooker

  1. Coat the inside of slow cooker pot with about 1 tablespoon of olive oil.
  2. Coat the inside of skillet with about 1 tablespoon of olive oil and heat over medium-high heat.
  3. Remove Bill Bailey’s Tri-Tip Roast from package and place in heated skillet, about 5 minutes per side allowing the Tri-Tip Roast to brown. During last 5 minutes of browning, add a cup of diced onion.
  4. Transfer Tri-Tip Roast to slow cooker, reserving onion in the skillet. Add water or broth to cover onion. Add two cloves minced garlic, cook and stir until onion is tender, about 5 minutes. Pour mixture over Tri-Tip Roast.
  5. Cook on high until Tri-Tip Roast is cooked through and tender, about 4 hours depending upon size of the Tri-Tip Roast.
  6. Remove from slow cooker, place on cutting board, cover loosely with foil and allow the Tri-Tip Roast to rest for 10 minutes.
  7. Slice against the gain for maximum tenderness.  Serve with juices from the slow cooker, if desired.
Instant Pot Icon

Instant Pot

  1. Select “Sauté” to preheat Instand Pot.
  2. Remove Bill Bailey’s Tri-Tip Roast from package.
  3. When the word “Hot” appears on the Instant Pot display, add a swirl of olive oil, place Tri-Tip Roast in Instant Pot and sear until Tri-Tip Roast is brown on all sides. Deglaze the inner pot with beef or chicken stock.
  4. Close and lock lid. Select “Pressure Cook” or “Manual” and use + or – button to set timer to 45-50 minutes pressure cooking time (depending upon thickness of the Tri-Tip Roast.
  5. When time is up, open pressure cooker using the “Quick Release” (see instructions for your Instant Pot brand).
  6. Remove Tri-Tip Roast from Instant Pot, place on cutting board, cover with foil and allow to rest for 10 minutes.
  7. Slice against the grain for maximum tenderness.

Optional: filter cooking liquid through a fine sieve, add a pat of butter, mix and drizzle over Tri-Tip Roast.

Sous Vide Icon

Sous Vide

  1. For Medium Rare doneness, heat a Sous Vide bath to 126°F – 135°F.
  2. Place Bill Bailey’s Tri-Tip Roast, still inside its original packaging, into the heated Sous Vide water bath making sure there are no holes in the original packaging.
  3. Use a lid or plastic wrap to prevent evaporation and monitor the water level to ensure the Tri-Tip Roast is submerged.
  4. Heat Tri-Tip Roast in Sous Vide water bath for 1 hour per pound.
  5. Remove Tri-Tip Roast package from bath and remove Tri-Tip Roast from packaging, reserving any juices.
  6. Heat a grill or cast iron skillet on high until very hot. Sear Tri-Tip Roast for 1 – 2 minutes on every side.
  7. Remove Tri-Tip Roast from grill or skillet, place on cutting board and slice against the grain for maximum tenderness.

Optional:  Drizzle juices over the slices.

Air Fryer Icon

Air Fryer

  1. Remove Bill Bailey’s Tri-Tip Roast from package.
  2. Set the Tri-Tip Roast into the air fryer basket.
  3. To cook Tri-Tip Roast to rare doneness, set the temperature to 400°F and the time to 15 minutes. After time is up, flip the Tri-Tip Roast and cook for another 15 minutes.  After time is up, check the Tri-Tip Roast using a food thermometer.  For rare the thermometer should register at 125°F internal temperature.*
  4. Remove from the air fryer basket, place on a cutting board, cover loosely with foil and allow the Tri-Tip Roast to rest for 10 to 15 minutes.
  5. Slice against the grain for maximum tenderness.

*Time is approximate since air fryers differ by manufacturer and wattage.  Approximate time for Medium doneness is 40 minutes and for Medium-Well is 45 minutes.

General Guidelines

  • Cook with a calibrated food thermometer to accurately measure the internal temperature of meats.
  • Cooking safely to medium doneness requires the meat to reach an internal temperature of 145°F and hold for at least 3 minutes.
  • Internal Temperature for other levels of doneness: Rare: 120-125°F; Medium Rare: 130-135°F; Medium Well: 150-155°F; Well Done: 160°F
  • Appliances will vary; adjust cooking times as necessary.
