Tri-Tip Roasts in an Instant Pot

  1. Select “Sauté” to preheat Instand Pot.
  2. Remove Bill Bailey’s Tri-Tip Roast from package.
  3. When the word “Hot” appears on the Instant Pot display, add a swirl of olive oil, place Tri-Tip Roast in Instant Pot and sear until Tri-Tip Roast is brown on all sides. Deglaze the inner pot with beef or chicken stock.
  4. Close and lock lid. Select “Pressure Cook” or “Manual” and use + or – button to set timer to 45-50 minutes pressure cooking time (depending upon thickness of the Tri-Tip Roast.
  5. When time is up, open pressure cooker using the “Quick Release” (see instructions for your Instant Pot brand).
  6. Remove Tri-Tip Roast from Instant Pot, place on cutting board, cover with foil and allow to rest for 10 minutes.
  7. Slice against the grain for maximum tenderness.

Optional: filter cooking liquid through a fine sieve, add a pat of butter, mix and drizzle over Tri-Tip Roast.

Corned Beef in an Instant Pot

  1. Remove Bill Bailey’s Corned Beef from package, lay in the bottom of the Instant Pot including any juices from the package.
  2. Add water to just cover meat.
  3. Close and lock lid. Select “Pressure Cook” and use + or – button to set timer for 90 minutes.
  4. When timed cooking is completed, open the pressure cooker using the “Quick Release” (see instructions for your Instant Pot brand).
  5. Remove Corned Beef from Instant Pot, place on a cutting board, cover with foil and let rest for 10 minutes.
  6. While Corned Beef is resting, add cabbage, potatoes, carrots, onions or your favorite vegetables to the Instant Pot, seal and cook on high pressure for 4 minutes. Quick release the steam.
  7. Slice against the grain for maximum tenderness and transfer to a serving platter. Arrange the cooked vegetables around the Corned Beef and serve with your favorite condiment.

Asada Style Meats in an Instant Pot

  1. Remove Bill Bailey’s Carne Asada from package, lay in the bottom of the Instant Pot.
  2. Add water or other liquid* to just cover meat.
  3. Close and lock lid. Select “Pressure Cook” or “Manual.” Use + or – button to set timer. Cook on high pressure level for 15 minutes per pound of meat.
  4. When timed cooking is completed, open the pressure cooker using the “Quick Release” (see instructions for your Instant Pot brand).
  5. Remove from Instant Pot, place on a cutting board, cover loosely with foil and let the Carne Asada rest for a minimum of 3 minutes.
  6. Slice against the grain for maximum tenderness.

Optional:  Filter the cooking liquid through a fine sieve, add a pat of butter, stir and drizzle over the meat.

* Other liquid: use broth or marinade mixture of ¼ cup lime juice, 8 cloves crushed garlic, ½ cup orange juice, 1/2 cup fresh minced cilantro, ½ teaspoon salt, ¼ teaspoon pepper, ½ cup olive oil, 1 minced jalapeño, and 6 tablespoons red wine vinegar.
